Chop-chop Ratatouille
SERVES 4-6. VEGAN
Ingredients:
1 16oz jar Nonna's Spicy Sauce
1 zucchini
1 whole yellow onion
1 whole red bell pepper
1 whole eggplant (skin on)
1/4 cup EV olive oil
3 cloves garlic
Sprig of rosemary
1/2 teaspoon fresh thyme
salt & pepper
Preparation:
In a large pan, heat the oil and sauté the roughly chopped onions, garlic and herbs until caramelized. Chop all the vegetables in 1/2 inch cubes and add to the pan. Season and cook for about 5 min stirring occasionally, until slightly browned. Add 1 jar of Nonna’s Spicy Sauce, cover & simmer for 5-10 minutes. Serve hot as a main dish or room temperature as a side.
A simple, delicious & rustic dish. No creepy ingredients!
